Healthy (but tasty) Kid Friendly Recipes from Frankie & Me

One lesson I've learnt whilst adapting to motherhood is that with children, nothing remains consistent. Just when you think you think you've got it 'sussed', be it with routines, soothing techniques - whatever, you can guarantee that it won’t last long. During those inevitable mum struggles, my husband always likes to remind me 'it's just a phase, it will pass', and low and behold he is mostly right which is sometimes a blessing, and sometimes not.

My biggest battle to date has been the 'you will eat nutritiously' battle. Just when I thought I'd succeeded in developing the palate of a mini gourmet who loved broccoli, quinoa, kefir and all manner of healthy foods, she has suddenly declared them all 'bleurrrgh' and now prefers 'white foods' and simple carbohydrates.

I've come to realise that educating the young palate isn’t a sprint but more a marathon, one that is likely to go on for years. So, in the spirit of trying to win this mum battle I am forever seeking out healthy (but tasty) kid-friendly recipes that the little ones will love. 

We love this blog Frankie & Me - healthy food for little people. Mum of two Nicola has created nutritious recipes that are simple to make yet taste and look beautiful.

I've learnt that presentation is everything to kids so if you want to convince them to eat quinoa - you'd better get creative. Nicola shows us how through her blog and YouTube channel Yummolicious. Here are our current faves: 

Green Pancakes

Frankie and Me Green Pancakes

Ingredients

  • 1/3 cup Fresh spinach 
  • 1/4 avocado 
  • 1 banana (ripe)
  • 1/4 cup Oats 
  • 1/4 cup self-raising flour 
  • 1 egg

Directions

  1. Blend all ingredients in a blender, till very smooth. 
  2. Pour 2 tbs sized heaps onto a hot pan with butter. 
  3. Cook 2-3 minutes each side and serve.

Veggie Sausages 

Frankie & Me Veggie Sausages for Kids

Ingredients
  • 250g Butter Beans (also known as Lima Beans)
  • 1 Onion
  • 1 Zucchini (grated)
  • 1 Carrot (grated) 
  • 1/4 cup Breadcrumbs 
  • 1/4 cup Cheddar cheese (grated) 
  • 1 Egg

Directions

  1. Drain the butter beans and place them in a large bowl. 
  2. Using a potato masher (or fork) mash up the beans till smooth.  
  3. Sauté the onion, zucchini and carrot till soft and slightly caramelised and add to the beans.
  4. Add the breadcrumbs, cheese and egg and mix it all together. 
  5. Heat up a pan with some olive oil and working in batches, roll a small handful of the mixture into a sausage shape and place on the pan. Your hands will get messy, so best done in batches placed straight onto the pan.  
  6. Cook for 2-3 minutes so the sausage is nicely browned and serv

 

Strawberry Coconut Ice Creams  

Frankie & Me Strawberry Coconut Ice Creams for Kids

Ingredients

  • 200g Strawberries 
  • 3 Frozen Banana 
  • 200ml Coconut cream 

Directions

  1. Chop the strawberries in half and cut the banana into small bite sized pieces.
  2. Blend the strawberries and 2 bananas together. 
  3. Pour into ice cream moulds and freeze for 20-30 minutes. 
  4. Blend the remaining banana and coconut cream.
  5. Pour on top of the strawberry mixture and freeze for 30-40 minutes
